Abstract
Provided they gather large quantities of food, wholesale markets, must guarantee the innocuousness and quality of the products they sell. In the Tres de Febrero Partido, the Mercado 3 de Febrero COOPROYCO operates under the control of the bromatology area of the municipality, which has the mission of studying the foods, their quality and composition to prevent diseases and take care of the neighbors’ health. A typical problem of the province is that markets operate in rather informal conditions, with inadequate infrastructure, and with deficient control systems that does not assure the quality of the products nor the traceability of the chain. In addition, the lack of storage and refrigerated transports and the use of precarious packaging (mainly reused wooden crates), which does not only infringe upon the quality of the foods but also produces high amounts of waste and refuse are factors contributing to the problem as well. In this sense, a study of the Mercado and its supply and distribution chain is posited.
